Thanks to continual education in the most renowned restaurants (for example the Park Royal / Walter Jenny, Palais Schwarzenberg and Hotel Sacher, Vienna) Werner Seidner knows all about refinement and extravagance in the kitchen. However, for him and his experienced team it's always the pure and genuine flavours that come to the fore. And these are provided for by the best ingredients from South Tyrol - some of it, such as fruit and seasonal vegetables, from our own farm. Werner Seidner says this about the secret of his success:
"The love of my homeland and of the natural beauty of South Tyrol is depply rooted in me and this is reflected in my work - in the way I deal with the treasures that nature supplies to us for food."
Most of our ingredients thrive under the sunshine of South Tyrol and in the native, vibrant nature. Trout and char are caught, for example, in the mountain streams of South Tyrol. The wild mushrooms come from the native forest. Game is often hunted by the boss, Josef Waldner, himself - just like his father used to do. Our excellent cheese comes from the well-known cheese affineur Hans Baumgarten and our legendary Kamut pasta is bought from the pasta producer Felicitti in Trentino.
